- 3 zucchinis
- 2 onions
- 2 carrots
- 1.5 Tablespoons tomato paste
- 2 garlic cloves
- 3 Tablespoons oil
- Salt, pepper to taste.
- (you can also add red pepper if you like hot)
Onion finely diced and carrot shredded on large holes of box grater.
Zucchinis cut in small squares.
Heat oil and add the onions, saute for about 5-7 minutes, then add carrots and saute another 5 minutes.
Then add tomato paste and garlic, saute again for 15 minutes.
After that it will look like that.
When its not too hot puree in blender and taste for seasoning. Chill until very cold. Serve on black bread.
